I thought EoD was pretty mid and SotO has less content than other expansions, but my girlfriend loves the game so I want to play it with her.

I think it’s rather good if you like GW2:

    • If you like exploring and don’t have the Skyscale: it has a cheaper and faster way of getting it compared to from War Eternal (Dragonfall).
    • If you like the GW2 story: it’s a standalone story that continues after the Dragon Saga and doesn’t require you to have finished it beforehand, and the first map is almost entirely made of thought experiments of unexplored lore and previous story bits.
    • If you like buildcrafting: you get access to Weaponmaster training, which allows you to unify the weapon pool on each class (so any Mesmer can use Shield or mainhand Dagger, regardless of specializations).
    • If you like grinding or legendaries and don’t raid: there’s an upcoming legendary armor set that can technically be earned by farming rifts.

I don’t know what specifically you found mid about EoD, but I’d say if you’re not too excited about what I showed up there, then you can wait for a sale.
