I would almost prefer the other way, with the login page generating the QR code and the authentication app scanning it and approving the login (like the app for Steam)
If you can setup a small server (nothing fancy, an old refurbed office PC does just fine) you can setup NextCloud. I use it for a Google Drive/Photos replacement. Doesn’t have as many nice features, but it works if al you want is archiving.

I would look at HP Elitedesk 8300’s or their successors (don’t recall the number). The 8300’s will fit 4 total drives with an additional power cable and some creative finagling of the insides. It won’t be the prettiest, but the 3570 is still decent and you can load it up with 16gb or 32gb of RAM I believe if you want to run containers on it.
You can find them cheaper if you look for ones without drives/RAM as well, I don’t know what parts you have besides the 1tb SSD
If you want to try Arch try EndeavorOS. Basically Arch with a handful of quality of life enhancements and a gui installer out of the box. Honestly though, if you read the wiki and know basic troubleshooting, Arch is really no more or less difficult then Fedora.
Joplin is nice. I used it for years before switching to Obsidian. Still like it because of RTF support, but Nextcloud sync is so slow with it compared to Obsidian.
