What’s wrong with msg? If it bothers you, you could add a dried shiitake or piece of kombu for similar effect.
Or like nutrinional yeast, which is basically the same thing. And interestingly enough both nutritional yeast And MSG are in the recipe. I’d say one of those is enough… But maybe it tastes too much of yeast if you don’t replace some of it with MSG.

Complaining about MSG is like complaining about black pepper.
MSG is both delicious and safe.
